Skyr, a traditional Icelandic dairy product, has found its way to Germany. That the trend has come to stay is the unanimous assessment at Biofach in Nuremberg. Irmgard Strobl, Member of the Management Board of Andechser Molkerei, explains in an interview at the exhibition why it is so important for the company to encourage consumers to act sustainably – and whether customers are prepared to spend more money on good products.
